From the forests and farms of Bastar
Fragrant rice, husked the dheki way.
Chhattisgarh is called the rice bowl of India, and Jawafool is one of its scented rice varieties. This rice is husked on a dheki, a wooden, foot-operated pounder used in village homes. A dheki husks the grain gently instead of polishing it the way a modern mill does.
The work behind it
- Paddy is harvested and sun-dried
- It is pounded on a wooden dheki to remove the husk
- The grain is cleaned and sorted
- Packed in Jagdalpur, Bastar
What makes it special
- Natural aroma when cooked
- Some of the bran layer remains, giving a light, nutty taste
- Small, fragrant grains
How to enjoy it
- Cook as everyday steamed rice
- Make kheer and pulao
- Serve with dal and Chhattisgarhi sabzi
